BBQ Chicken, Corn and Slaw Salad

Finally, we're gearing up for warmer weather and outside activities. This recipe from Weight Watchers is a great way to enjoy a delicious Spring salad with minimal effort and maximum taste. Next time you buy a rotisserie chicken, grab a bag of coleslaw mix and some reduced-fat ranch dressing and you’re just about there. Got BBQ sauce in the fridge and frozen corn in the freezer? You’re all set. Dig in and show Spring 2025 what you’re made of!


2 1/2 cups packaged coleslaw mix (shredded cabbage and carrots) 1 medium scallion, thinly sliced 2 Tbsp. reduced-fat ranch dressing 1 1/2 cups diced cooked skinless boneless chicken breast 2 Tbsp. barbecue sauce 1 cup frozen or fresh corn kernels


In a medium bowl, toss coleslaw mix, scallion and ranch dressing. Divide salad between 2 bowls.

In a small bowl, toss the chicken with the barbecue sauce. Divide chicken between the two bowls.

Top each bowl with 1/2 cup corn. Serve or cover and refrigerate for up to 1 day.
